Melissa from @ladylunching whipped up this Salted Caramel Turtles recipe for us and we couldn’t be more excited to share it. As an Arizonan native, she’s got a soft spot for food and an eye for photography, and plating. She’s the sole woman behind her Instagram feed @ladylunching and her goal is to empower women to have a healthy relationship with themselves and food. We love her tagline - “A true lady.... eats whatever the hell she wants” - and we could not agree more. Check out some recent press about her on Voyage Phoenix.

Melissa here - I personally gravitate to the non-bake desserts mainly because I'm trash at baking. When I was rummaging around my pantry for a sweet treat, I wondered how I could possibly put some of my favorite ingredients (dark chocolate, sea salt caramel, and walnuts) together with minimal effort. VOILA- salted caramel turtles!

Enjoy!

Cooking time: approximately 20 minutes

Makes approximately 15 turtles

Line large baking sheet with a layer of parchment paper. Place approximately 1 tablespoon cluster of walnuts on the parchment paper. Slowly melt caramel on stovetop or microwave over medium-low heat. Make sure to add 1-2 tablespoons of water to the caramel to help soften. Spoon caramel onto walnut clusters and let sit for 5 minutes or until caramel is firm again.

While caramel is hardening, slowly melt chocolate in a saucepan over low heat, stirring constantly to prevent it from burning. Once the chocolate is melted, drizzle or scoop onto caramel-walnut clusters. Quickly sprinkle small pinch of Sonoran Sea Salt on top of the clusters and let sit for about 5 minutes or until chocolate hardens.

Cook’s notes: If walnuts are not your nut of choice, feel free to use any nut. Just make sure to get them unsalted.
