Grilled Portobello Mushrooms
Meet your new favorite holiday or anytime side dish for that matter. Portobello mushrooms are one of my favorite veggies to prepare because they are hearty and healthy and have an amazing depth of flavor that is accentuated by the seasonings and spices used in the preparation. They have a great depth of flavor on their own, but paired with just a few simple ingredients, it’s next level.
For this dish, we used our Red Wine Salt - a Desert Provisions and Sand-Reckoner Vineyards collaboration - to really bring out the depth of flavor of these ‘shrooms. This paring highlights their deep earthy notes, similar to a Syrah wine, which is the main varietal in the wine used to infuse this salt. Like a good glass of red wine, these mushrooms have layers of flavor and a beautiful deep red speckled finish.
It’s no secret, we’re suckers for good wine and food and this collaboration brings it all together. Sand-Reckoner Vineyards produces bold wines with grapes grown in southern Arizona. Wine from Arizona, you ask? Yep - there are three main AVAs (American Viticultural Areas, the technical term used to define wine grape-growing regions across the country) in Arizona. Arizona has historically not been known as a wine-growing region. However, a few key winemakers have been changing this narrative. Takes 15 minutes
Serves 4 as a side
1 lb portobello mushrooms (about 4-6 depending on size)
2 tbsp olive oil
1-2 tsp of fresh herbs - rosemary, thyme, oregano (optional)
Trim stems off mushrooms and gently clean/brush any dirt off with a brush. Do not wash with water.
Toss and fully coat mushrooms with olive oil and generous pinches of Red Wine Salt and herbs.
Grill on a wood-fired grill for 4-5 minutes each side until tender. Alternatively, you can use your stove top/range and grill in a cast iron grill pan over medium-high heat for 4-5 minutes.
Allow to cool slightly and slice. Plate and serve. Top with Red Wine Salt.
