Chiltepin Pineapple Salsa
Meet your new favorite salsa. The mixture of sweet and spicy really hits the spot. You can play around with this recipe - it honestly could not be easier. Just prep and mix. Want it a little spicier, add more Wild Chiltepins. More tart, add more lime or even a dash of vinegar. The options are plentiful for this salsa, but we like it best on fish tacos or simply with tortilla chips! It can also be added to a cold black bean salad or pork tacos. Not into Mexican food? This makes a tasty addition to a grilled pork chop too.
Takes: 10 minutes
Serves 2-6
2 cups pineapple, chopped into small cubes
½ cup white onion, finely chopped
¼ cup cilantro
Juice of 1 lime
Pinch of cumin
1 clove garlic, minced (optional)
3 Desert Provisions Wild Chiltepins + more to taste
Mix all ingredients into a bowl and gently mix. Let the salsa sit for 1 hour for flavors to fully meld. Taste and adjust seasoning. Sprinkle with additional crushed chiltepins for extra heat!
Cook's notes: This can be prepped a day in advance, but we recommend keeping all the ingredients separate and mixing a few hours before serving for the best flavor.
