Pistachio Basil Pesto Pasta
You can’t go wrong with fresh pasta, a good pesto, a little parm, and some solid crushed chile flakes. In this recipe, we recommend using our Pistachio Basil Pesto, but heck, you can use any pesto you want. Store bought pesto even works in a pinch. Just be sure to top your pasta with a little Hatch chile goodness - our crushed red or green chile flakes add just the right extra kick.

Serves 2
8 oz fresh penne pasta, reserve approx. ¼ pasta water
1/2 cup Pistachio Basil Pesto
1-2 oz finely grated parmesan
Desert Provisions Sonoran Sea Salt
2 tsp Desert Provisions Crushed Hatch Red or Green Chile Flakes
Cook pasta according to package instructions. Before straining, reserve ¼ cup pasta water. Add 1/2 cup Pistachio Basil Pesto to strained pasta. Toss to combine. Add reserved pasta water to thin, as needed.
Plate in bowls and top with finely shredded parmesan (we recommend using an microplane). Top with additional pinches of crushed red or green chile flakes to taste.
