Green Chile Yogurt Crema
We’re big condiment fans here at Desert Provisions. If it involves dipping, drizzling or sauce-smothering…we’re doing it. That’s why this Green Chile Yogurt Crema is a recurring staple in our fridge. Why? Because it goes with everything! Naturally great on our Simple Fish Tacos, but just as essential on corn on the cob, grilled veggies and chicken. Heck, we drizzle this goddess sauce on our shredded cabbage salads and southwestern bowls. You name it, you can crema it.
This crema is super simple, taking less than 10 minutes to put together. Make ahead and double the recipe, it will keep in the fridge for up to 5 days.

Takes: 5 minutes
Makes 1 cup
1 cup lowfat or non-fat Greek yogurt
1 lime, fresh-squeezed
½ tsp cumin
1 tbsp olive oil
Place first five ingredients into a bowl and stir to fully combine. Slowly add olive oil while you continue to mix to fully incorporate. Thin with a teaspoon of water at a time or add additional lime juice. Add additional salt to taste. Garnish with a pinch of Hatch Green Chile Powder and cilantro (optional).
Cook's notes: Feel free to adjust the amount of Hatch Green Chile Powder to kick up the spice level or dial it back, as with most of the ingredients in this recipe. Simply use this as a base for your own creations. Some mix-ins to consider: chopped cilantro, diced shallot, turmeric, fresh-squeezed orange, or whatever you’re craving that pairs well with your dish. You can also thin the crema by adding a little water or more fresh-squeezed citrus. Just be mindful the citrus can dominate the flavor so balance it with additional spice and salt. This will keep for about 4-5 days stored in the refrigerator in an airtight container.
